any ideas? I would rather not pay an extra 7 dollars per television in my house since I have 6 extra tvs in my house.....

The "fiber to the curb" thing is actually a lie. They do fiber to the local loop, and they use a single twisted pair to your house from there. It can be up to >2km away, on a single twisted pair of copper... usually cat 3 (if you're lucky). From there they run it through some more gear at your house and convert it to coax, then feed into your internal wiring from there.
It's actually amazing that they can pull so much bandwidth from a single pair... but it's nowhere near what fiber can do

I'm wondering if finding another "set top box" and using it in another room would work.

I know very little about the wired services of att...I kinda cant ask questions like that cause it makes me look shady.... att plays dumb and says it wont work. and yea, it's not much for 1 tv... but when you have 7 total tvs in your house it kinda adds up....
